Ground Beef in Sour Cream V-8 Noodles

"I got this from an E-mail Recipe group I belonged to BZ. (Before Zaar) This is a yummy one pot dinner that makes a great quick weeknight meal. I had some V-8 juice that was sitting in my fridge going to waste so this worked great for me. I used only celery salt, the flavor really adds something. Noodles are egg noodles in my house, but I am sure elbows or corkscrew would work fine. Hope you enjoy!"

  • Saute onion in butter until tender; add meat, brown lightly.
  • Place noodles in a layer over meat.
  • Combine tomato juice and seasonings; pour over noodles.
  • Bring to a boil; cover.
  • Simmer over low heat 30 minutes or until noodles are tender.
  • Stir in sour cream and mushrooms; bring to a boil.
  • Serve hot.

    Everyone loved this, including the picky kids. An easy, one skillet main dish that's great comfort food. Made as directed except had some fresh mushrooms to use up and sauteed them along with the onion. I did not find it salty, but suggest starting with 1t salt and 1t celery salt if you're worried about it. Used lowfat sour cream. Thanks for sharing the recipe!
     
  2. Three Kids Make Me Crazy
    This was just okay in my opinion. My kids refused to eat it after one bite, and DH gobbled it up so I think it averages out to three stars. If I make it again I'll definitely leave the extra salt out (the V8 and worcestershire were enough). Served with recipe #332726.

<p>About me hmmm...well as you can see by my name, I married my favorite Repo Guy on New Years Eve 2004. We were together for a total of 10 years before I would give in...LOL. I have an awesome son who graduated High School June 2011.
