This makes an easy, flavorful, filling meal! I used a red pepper instead of green and no onions, otherwise made as specified. I was surprised to see parmesan cheese as an ingredient in this but it added a nice flavor to the filling. Thanks for posting this yummy recipe!

The only change that I made was to scoop out the potatoes and roughly mashed them, then combined with the mixture. Stuffed the skins, and kept about half of the cheese mixture for the topping. It was great!! Thanks for posting.

I cut this recipe down using only one potato and made it for my lunch today. I cheated by first cooking the potato in the microwave and the ground beef was already browned, so it didn't take long at all to put this together. I really enjoyed the flavor combination in this potato. The only salsa I had in the house was mild, but next time I'll use hot just to kick it up a notch. Thanks for sharing this recipe!
