  • Cut zucchini in half - lengthwise.
  • Mix butter, salt, pepper and parmesan cheese together and spread on each half.
  • Put butter side up on grill pan on medium heat for 5 minutes.
  • Turn and grill other side for 5 minutes.

    Super simple recipe that results in a side dish that can hold it's own along side just about anything. I grilled these along side a small steak and leftovers worked well for lunch today. Method works well for eggplant too! I'll be using this recipe a lot, thanks for posting it!

    My hubby loved this, of course he loves zucchini no matter how it is made. 2 1/2 yr old liked it enough to want seconds and I was very surprised. I don't care for zucchini but this was really good. I did use House Seasoning for the salt and pepper though. Very good will make again, thanks!
