  • Prepare grill for direct-heat cooking.
  • Combine sugar, chile pepper and salt; sprinkle over both sides of pineapple slices.
  • Grill, turning once, until browned, 3 minutes per side. Cool slightly; cut into chunks.
  • In large nonstick skillet heat oil over medium heat; add scallions.
  • Cook, stirring, until golden, 3 minutes.
  • Stir in garlic; cook 1 minute. Add rice, salt and pineapple; cook, stirring, until heated.

  1. I may have used too much rice. This was an interesting dish, but the flavors were not consistant throughout. The pineapple seemed dry and tough. Everyone finished thier servings but no one asked for more. Everyone agreed on a rating of three.

I love being at home with my children..love paying for ALL the stuff my 2nd grader brings home...soccer fees, and basketball fees, and book orders...I love cartin' my kindergartner around, and then coming home and cuddlin' with my little girl, and shopping for her favorite thing...shoes. My husband and I are as tight as 2 people can be, and I hate it when he leaves for work and can't wait until the clock strikes 4:30 because I know that means he's on his way home. Life is good. I couldn't ask for more.</p>
