Marinade
- 1⁄4 cup soy sauce
- 2 tablespoons lemon juice
- 1 tablespoon canola oil
- 1 garlic clove, minced
- 1 jalapeno pepper, seeded and minced
- 2 teaspoons fresh ginger, minced
- 1⁄2 teaspoon ground cumin
- 6 boneless skinless chicken breasts

Sesame Ginger Sauce
- 1 teaspoon canola oil
- 1⁄2 cup fresh ginger, minced
- 2 teaspoons sugar
- 1⁄3 cup water
- 1⁄4 cup soy sauce
- 1⁄4 cup rice vinegar
- 1 tablespoon sesame oil
directions
- To make marinade: Combine soy sauce, lemon juice, oil, garlic, jalapeno, ginger and cumin in a plastic zipper bag.
- Add chicken and seal bag.
- Refrigerate a minimum of 2 hours or overnight.
- To make Sesame Ginger Sauce: Heat oil in a small saucepan over medium heat.
- Add ginger and sugar and a small amount of the water.
- Cook until softened.
- Remove from heat, add remaining ingredients.
- Cover and refrigerate for a minimum of 2 hours or overnight.
- Prior to serving, strain sauce (to remove minced ginger) and reheat.
- Remove chicken from marinade and grill until no longer pink in center, about 5 min per side.
- Thinly slice chicken and top with 1 tablespoon Sesame Ginger Sauce.

This was really good. I left it in the marinade overnight (accidentally) and also left the ginger in the sauce all night, so mine was quite pleasantly spicy. I recommend it! I only used half a chicken breast (portioning), so sliced the chicken extremely thin. I plated the chicken slices on top of the sauce and served it with couscous. Made for My Three Chefs event.
