- 4 ounces swiss cheese, shredded
- 4 ounces cheddar cheese, shredded
- 1⁄3 cup mayonnaise
- 1 tablespoon prepared mustard
- 1 tablespoon chopped green onion
- 8 slices bread
- 1⁄4 cup butter, softened
directions
- Combine cheeses, mayonnaise, mustard, and chopped onion.
- Spread mixture on one side of 4 of the bread slices to within 1/4-inch of edges.
- Top with remaining bread slices.
- Spread softened butter on the outer sides of the sandwiches.
- Cook over medium heat in a hot skillet or griddle until golden brown, turning once.

These were good. I used sharp cheddar cheese and swiss and I think it may have been better if one of the cheeses was milder. I also used dijon mustard so there were a lot of flavors competing for my attention. It was a bit much for my toddlers. We only made two sandwiches today, so I added more green onion and look forward to having the leftover tomorrow.

Much better than a plain old grilled cheese. I cut the recipe in half, used dijon mustard, red onion, and added sliced tomato to my version. (I love grilled cheese with tomato!) I think I'd like to try it with green onions but I used them all last night and it is just too cold right now to shop!! I think this would make a nice family lunch when relatives are visiting.

I am a housewife who loves the job of mother and wife. I have loved to cook ever since I was old enough to scramble eggs.
