Green Tomato Spice Loaf

This recipe was in a local paper a number of years ago by Mrs May McIntyre. What a great way to use some of those green tomatoes Freezes well

  • Mix all the dry ingredients together (include sugar. walnuts, orange rind& spices) Beat eggs with vanilla and oil.
  • Add egg mixture and tomatoes to dry ingredients.
  • Mix but do not beat.
  • Pour into 3 medium greased loaf pans.
  • Bake in 350F oven for 45 minutes.

    Oh so easy to make and a great use of my green tomatoes, I made these for a fall bonfire as muffins and they were gone long before dessert time. Thank you! Next time I may up the tomatoes to 2 1/2 cups as they were a little lite on the tomatoes for me.

    This is an excellent recipe; a great way to use green tomatoes! The batter is very thick, but the bread is light and very flavorful. Instead of disparing over tomatoes that don't ripen, I will be looking forward to them. Thanks Bergy.

    I had fun using up my end of season green tomatoes. The bread was very tasty, great spices, not too sweet. Mine was not quite as mosit as I would have liked. Of course that may be because I cut the recipe by 1/3 and might have gotten some measurements a little off. I agree with a previous reviewer to increase the orange peel, most excellent.
