  • Place zucchini in a bowl of warm water to soften.
  • Boil pasta.
  • Sauté spinach in olive oil, garlic, and roasted red peppers.
  • Toss together with avocado after draining pasta, season with salt, pepper, and balsamic vinegar.
  • Top with cheese.
  • Broil for 2 minutes to get the cheese bubbly.

  1. Loved this easy and healthy pasta! I don't care for avocados so left them out, and used noodles as that's what I had on hand. I was planning to serve this as a side dish but it ended up being dinner, and a satisfying one at that - thanks for sharing the recipe! Made for Fall PAC 2012

When i first got married i pretty much hated to cook but one day my husband got me a rachael ray cookbook. Now, i just can't stop. I cook for every meal. I would rather cook than go out to eat. We lived in Italy our first year of marriage so i love to cook italian things I'm a terrible baker... just terrible. My mom is cajun so most of things i cook are either cajun inspired or italian. I was also raw vegan for a while so i like to encorporate healthy things back into our diets. I believe eating cold takeout in front of the computer is the best way to wind down.
