Green Chili & Scallion Cheese Ravioli

I've said it many times in my front page and in recipes...I LOVE Green Chilis! Here is another one of my twisted uses for those giant bags of roasted green chilis that fill my freezer from September to December of every year.

ingredients

Won Ton Raviolis
- 1⁄3 cup scallion, minced
- 2 garlic cloves, minced
- 1⁄3 cup tomatillo, minced
- 1⁄2 cup green chili, roasted, seeded, peeled, and minced
- 1 cup Cotija cheese, fresh grated
- 1⁄2 cup ricotta cheese
- 1 egg
- 1 teaspoon salt
- 1⁄2 teaspoon black pepper
- 1⁄4 teaspoon cumin
- 24 wonton wrappers

Cream Sauce
- 1⁄3 cup white onion, diced
- 1 garlic clove, minced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1⁄4 teaspoon cumin
- 1⁄4 cup chicken stock
- 1 cup cream
- salt
- pepper
- 2 tablespoons cilantro, chopped
- 2 tablespoons walnuts, chopped
directions

Raviolis:
- Mix together first 10 ingredients in a large bowl and use as filling for your Raviolis (made from the won ton wrappers).
- Cook in a pot of salted boiling water for 2-3 minutes.

Sauce:
- Melt butter and olive oil in a saute pan over medium heat. Add onion and cook until soft, about 3-4 minutes. Add garlic, cook for 1 more minute.
- Add cumin, chicken stock, cream, salt, & pepper. Increase heat to high, bring to a boil and reduce to a simmer, cook for an additional 3-4 minutes stirring often. Remove from heat.
- Serve Raviolis with the cream sauce topped with the walnuts and cilantro.
- Enjoy!
