“Green Butter” (Garlic-Herb Butter)

"Perfect all-purpose herb butter - escargots, clams casino, bruschetta, over meat. . . My picky 6 yr old loves “Green Butter” and will eat it on anything!"

• Ingredients: 8
• Yields: 1 1/2 Cups
• Serves: 10

ingredients

• 1 head garlic
• 1 cup butter, softened
• 1⁄2 cup flat leaf parsley, chopped
• 1⁄4 cup fresh tarragon, chopped
• 1⁄4 cup shallot, minced
• 1 tablespoon lemon zest
• 1⁄2 teaspoon kosher salt
• 1⁄4 teaspoon black pepper

directions

1. Wrap head of garlic in foil. Bake at 375 for 45 minutes.
2. Squeeze the soft garlic from the head into a blender or processor.
3. Add remaining ingredients. Purée until smooth.
4. This recipe freezes beautifully. Sometimes I double or triple the recipe and freeze it for future use.
