Greek Peppers With Feta Cheese and Tomato Sauce

- 1 kg long sweet green pepper, halved
- 2 jalapeno peppers, finely chopped
- 500 g fresh tomatoes, grated
- 250 g feta cheese, crumbled
- 3 garlic cloves, finely chopped
- 1⁄2 cup basil leaves, chopped
- 200 ml sunflower oil
- 2 tablespoons olive oil
- 1⁄2 teaspoon salt (or to taste)
directions
- Rinse the peppers well, remove the stems and seeds and place on absorbent kitchen paper to dry.
- Heat the oil in a frying pan and fry the peppers.
- With a slotted spoon transfer the peppers to a shallow oven dish and add salt to taste.
- Spread the garlic on top, then the tomato and the chopped jalapeno peppers.
- Adjusting salt if necessary but remember not too much as the feta cheese is rather salty.
- Sprinkle on the olive oil and basil, then finally sprinkle the crumbled feta cheese on top.
- Place in a pre heated oven at 180 degrees Celsius for approximately 20 minutes, until the liquid has been absorbed and the feta starts to lightly brown.

this dish had a great WOW factor! Made as written to go with recipe#399253. Though I did add a little mint, as it was tangled with the basil :) <br/>I have never "grated" a tomato, so I used one fresh and a little canned, diced tomato. I will definately make this again! made for Aussie swap, Jan 2014
