- 2 pita breads, cut in half
- 1⁄4 cup feta cheese spread (tyrokafteri)
- 1⁄2 cup shredded cooked lamb
- 12 kalamata olives, pitted
- 2 thin slices red onions, separated into rings
- assorted cooked vegetables (optional)
- tzatziki, sauce
directions
- Spread feta cheese spread inside each pita.
- Add 2 Tablespoons shredded lamb to each pita half, then add olives, onions, and whatever veggies you have around. I used an asparagus spear.
- If desired, add some tzatziki sauce.
