Grapefruit Ambrosia

- 5 lbs grapefruits
- 1 cup sweetened flaked coconut
- 2 tablespoons campari
- 2 tablespoons sugar
- salt
directions
- Cut peel from each fruit with a sharp paring knife (including all white pith).
- Cut each segment from each fruit free from membranes.
- Halve grapefruit segments crosswise and transfer pieces to a bowl.
- Stir in coconut, Campari, sugar, and just a pinch of salt.
- Refrigerate, covered, at least 15 minutes or up to 4 hours.

After several floods to my basement, I am starting to input all of the many many recipes that I've been collecting for years. I didn't realize just how many I had saved up... must make note to self.. step away from the cookbooks!
