ingredients
- 1 cup barley
- 1 cup spelt, flakes
- 1 cup old fashioned oats
- 2 tablespoons brown sugar
- 1 teaspoon vanilla
- 1⁄4 cup honey
- 1⁄2 teaspoon kosher salt
- 1 tablespoon safflower oil
- 1 cup almonds, sliced
directions
- Preheat oven to 325-degrees F.
- In a bowl mix together first three ingredients (flakes - oats).
- Spread mixture onto a rimmed cookie sheet. Bake 30-40 minutes, turning every 10 minutes or so and mixture is golden brown.
- Transfer mixture to bowl and add remaining ingredients, tossing to coat.
- Return mixture to cookie sheet, spreading in an even layer.
- Bake for 20 minutes, stirring after 10 minutes, and mixture is golden brown.
- Let cool.
- Granola can be stored in a covered container for up to 3 weeks.

Wow! This granola tastes fantastic! Only problem I had was that the barley never got soft enough, so it's a bit hard to eat. I used pearl barley and used the longer cooking time. I will definitely be making this again, but next time I'll substitute steel cut oats for the barley. Thanks ellie for a great idea, please see my rating system.

My son was able to get spelt flakes in one of the natural food markets he frequents when he's down in Orange Co, so I was able to follow this recipe right on down! I did add some raisins after it was all done & had A VERY NICE TASTING GRANOLA! I'm intrigued with the spelt & will be on the lookout for the flour to use in several recipes ~ The flakes have an unusual (but great) taste (more nutty then whole wheat flakes)!
