Pie Crust
- 1 1⁄2 cups flour
- 1 teaspoon salt
- 1⁄2 cup oil
- 2 tablespoons milk

Filling
- 2 bananas, mashed
- 1⁄3 cup all-purpose flour
- 1⁄4 teaspoon salt
- 2 cups milk
- 3 egg yolks, lightly beaten
- 2 tablespoons butter or 2 tablespoons margarine
- 1 teaspoon vanilla extract
- 3 medium firm bananas

Topping
- 8 ounces heavy whipping cream

Make the Pie Crust:
- Mix flour and salt together with a fork in a pie pan.
- Make a well in the center and add the oil and milk.
- Mix with a fork til it makes a ball.
- Flatten and press into the pan in pie crust shape and flute the edge.
- Bake at 375 for 10-12 minutes until golden.

Make the Filling:
- Blend the mashed bananas with the flour, salt and 1/4 of the milk.
- After well mixed, add the remaining milk and blend until mixed thoroughly.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
- Boil for 2 minute.
- Remove from heat.
- Stir in a small amount of the mixture from the saucepan into the egg yolks to warm up the yolks, so you don't end up with scrambled eggs.
- Return everything to the saucepan.
- Cook for 2 minutes, stirring constantly.
- Remove from heat and add butter and vanilla; mix well; allow to cool slightly.
- Slice the bananas and place evenly in pie crust.
- Pour cream mixture over bananas.
- Place in fridge to cool.

Make the Topping:
- Whip the whipping cream with an electric beater until you have whipped cream. :).
- Top the filling with whipped cream once the filling has cooled.

I've made the filling several times and it's great! Thank you for showing how this can be done with no sugar. It's a shame there are bad reviews. I think people don't let it thicken enough. I was fortunate to have read some posts on another recipe and use 10 minutes as a guideline. By the time you're done, it should be more like pudding than gravy.

An absolutely horrible flop! Disgusting looking and a pie plate of goo. I am an experienced cook and baker. I have made many, many cream pies, this was just en epic fail. I will make it again, in a few weeks. But this time, it is a grayish, brownish color, would not set, just a jiggly goo in the crust, tasted a wee bit of flour, very little banana flavor.

This was so wonderful! Thank you for the recipe! I made this for my husband's birthday since he loves bananas and we are trying to stay away from a lot of sugar. I did add a little bit (like 2 tbsp) of pure maple syrup to add a little extra sweetness to both the pie filling and the whipped cream. So good!
