Grandma Vi's Green Jello Salad

"Served at my grandma's house for every holiday occasion as long as I can remember. You wouldn't know there is cabbage in this unless you saw the ingredient list! Tastes like fruit and whipped cream!"

  • Drain juice from can of crushed pineapple into a measuring cup.
  • Add enough pineapple juice to make 2 cups.
  • Bring the 2 cups of juice to a boil.
  • Remove from heat and dissolve completely 2 pkgs.
  • of lime jello in the juice, stir, stir, stir.
  • Add all the cream cheese pieces using a gravy whip to blend.
  • Add 6 ice cubes and pineapple, stir until ice dissolves.
  • Put in the freezer until cool and syrup-like.
  • Fold in chopped nuts, cabbage (shredded very fine), and Cool Whip.
  • Refrigerate several hours.

  3. Made as a test run for our annual halloween party. The kids loved it even with the cabbage. I added in some shredded carrots to make it even more festive for the occasion. We will be using this one.

  5. This was surprisingly tasty! I only used 8 oz of cool whip. My family had a fun time trying to guess the secret ingredient - cabbage! I was a bit weary but it did add an interesting texture to the salad. I will make this again.

I am the mother of three (one grown, one in middle school and one in high school). I have grandchildren who we invite over regularly to spend the night. We have lots of fun and a very full house! I do all of the baking and my husband cooks all the dinners. He loves to BBQ and cook and he is GOOD at it! He is wonderful with the children and I appreciate him so! I enjoy gardening, crafts, sewing, and crocheting, pets, and all kinds of "kid fun". If I had a month off I would spend it somewhere on the coast with just my sweetie and a view of the sea. I would miss the kids terribly so I would have them visit us in the hotel (that of course has room service) on Thursdays,Fridays, Saturdays, and Sundays for swimming, walks, beach-combing, dune climbing and dune buggy rides, movies, church, and the hottub!
