- 4 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 3 1⁄2 cups flour
- 2 cups zucchini, grated (not peeled)
- 1 1⁄2 teaspoons baking soda
- 1 1⁄2 teaspoons salt
- 1 teaspoon cinnamon
- 3⁄4 teaspoon baking powder
- 1 teaspoon vanilla
- 1 cup walnuts, finely ground
directions
- Preheat oven to 350
- In large mixing bowl, beat eggs & gradually add sugar, then oil.
- Combine dry ingredients, then add to egg mixture, alternately with Zuchini.
- Add nuts & vanilla.
- Pour into 2 loaf pans & bake on lowest rack for 55 minutes or until done.
- Let stand for 10 minutes then turn to rack to cool.
