Gram's Potato Salad

    lbs potatoes, cubed i prefer them peeled but you can leave the skins if you like the flavor
  • 2
    hard-boiled eggs, diced
  • 2
    stalks celery, chopped
  • 12
    small onion, chopped
  • 1
    cup mayonnaise (I was given explicit instructions to use only Hellmann's)
  • salt and pepper

DIRECTIONS

  • Boil potatoes until tender, drain and allow to cool for about 5 minutes.
  • In a large bowl fold potatoes with veggies, eggs, seasonings.
  • Gently mix in mayo until everything is well dressed, this may take the whole cup sometimes not.
  • Keep chilled until served.
