ingredients
- 2 cups dried peas
- 1 quart water
- 3 tablespoons butter
- 3 tablespoons flour
- 2 teaspoons salt (or more)
- 1 teaspoon sugar
directions
- Rinse the peas well and pick out any foreign objects.
- Place in water to soak overnight in a cool place.
- Let them simmer in the water they were soaked in, approximately 1 1/2 to 2 hours.
- Mix the flour with the butter and add to the peas and let simmer about 10 minutes longer.
- Add salt and sugar to taste.
- Please Note: * If you wish, you may add a peeled or diced carrot to the peas during the last 1/2 hour of cooking.
- No sugar is needed if you add a carrot.

So simple and so good! I could only find dry split peas, so the peas took far less time to cook and came out looking like green mashed potatoes. Ugly dish, but it was so delicious to make up for it. Instead of carrots, I mixed in some chopped, fried BACON at the end. Despite the simplicity, this is one of those rare vegetable side dishes that is capable of outshining a main course.1Reply
