Golden Peanut Butter Bars

ingredients
- 2 cups all-purpose flour
- 3⁄4 cup light brown sugar, firmly packed
- 1 egg, beaten
- 1⁄2 cup unsalted butter, cold (or margarine)
- 1 cup peanuts, chopped (I just pour some in my food processor and chop until fine)
- 1 (14 ounce) can sweetened condensed milk (NOT evaporated milk)
- 1⁄2 cup peanut butter
- 1 teaspoon vanilla extract
directions
- Preheat oven to 350°F
- Combine flour, brown sugar and egg; cut in butter until crumbly. Stir in peanuts. Reserving 2 cups crumb mixture, press remaining mixture on bottom of 13x9-inch baking pan. Bake 15 minutes or until lightly browned.
- In large bowl, with mixer, beat condensed milk with peanut butter and vanilla. Spread over prepared crust; top with reserved crumb mixture.
- Bake 25 minutes longer or until lightly browned. Cool. Cut into bars. Store leftovers covered at room temperature.

These are great! I needed to use up a can of sweetened condensed milk, and we are big peanut butter fans, so I thought I would try these. I will definitely make them again. I might add just a little salt somewhere, maybe 1/4 teaspoon to start. I also added some chocolate chips into the top layer, just because we are crazy about that combo. Thanks for posting the recipe - it is easy, quick, and VERY satisfying.

I think I expected more of a brownie/blondie texture. While this wasn't exactly what I was expecting, it had quite a lot of peanut flavor and wasn't super sweet. I might actually try the chocolate chips next time as Jennifer suggested. Nice crunch from the chopped peanuts, as well :) Thanks for posting! I will be making this for my father for Christmas.
