Goat's Cheese and Tomato Salad Wraps

"Fast, easy and refreshing for a summer sandwich. Can't remember where I got this recipe. I think it was from a package of tortillas!"

  • In a bowl, combine all ingredients except tortillas.
  • Divide mixture evenly between the 4 wraps, and enjoy!

  1. A nice light lunch. I did add a little fresh basil, some chopped red bell pepper, some fresh zucchini, a few kalamata olives, and a few chickpeas for protein. It was yummy. The leftovers can be used just as a side dish. Oh, and I subbed blue cheese because I had some to use up. I think feta, goat or blue cheese would all work well.
     
  2. VERY tasty! We added chopped fresh basil leaves. I think this would also be great if you substitute blue cheese or feta cheese.
     
  3. wau this is excellent! thanks alot for this! i warmed tortillas ahead and spread a thin leayer of salsa on it before i inserted the salad! very easy to make and very tasty!
     
  4. I made this regularly last summer with goat's cheese from the farmer's market, but just realized I never reviewed it. I especially liked it with goat's cheese that was packed with Olive oil & basil. I highly recommend this wrap.

I live in Canada, and I work in the restaurant industry (not a chef!). Don't have a favorite cookbook, but I love these internet sites, (especially this one, where you can get the dietary info - that's cool). I'm pretty passionate about animals, and about my health, (regardless of what my beer and cigarette habit might say about me!). The majority of food I like to eat is vegetarian, if not, vegan. I am able to enjoy a good steak every now and again, however. As long as I don't have to cook it. (I hate cooking meat - makes such a mess...) I have recently had a month off - I took the time to backpack around Mexico by myself. Crazy? Nah. Well, maybe...
