Gluten-Free Oatmeal Protein Cookies

ingredients
- 2 cups gluten-free quick oats (Bob's Red Mill makes some)
- 1⁄2 cup milk
- 2 eggs
- 1⁄2 teaspoon salt
- 2 teaspoons vanilla
- 2 scoops vanilla whey protein powder (make sure it is gluten-free, I used Spirutein Vanilla Whey)
- 1 -2 tablespoon cinnamon, depending on your taste (it helps stabilize your blood sugar)
- 1⁄3 cup brown sugar (more if you like them really sweet) or 1/3 cup honey (more if you like them really sweet)
directions
- Mix all ingredients together. The mixture should be like sticky cookie dough, not crumbly (add more milk if too dry and more protein powder if too wet). Drop by spoonfuls (about 1 1/2 tbsp/cookie) onto greased or parchment lined cookie sheets. Bake at 350 degrees for 15 minutes.

It’s rare that I follow a recipe, but this one was nearly perfect! I ended up adding a bit of extra protein powder to help with the stickiness, and then some raisins, but They turned out great. I may try maple syrup instead of honey next time because i like the flavor better. But if I want to make them a little more hearty, I top them with some peanut butter. They’re great with coffee or even post workout!

I wasn't sure what to expect when I tried these out, but they turned out delicious! Even (most) of my children enjoyed eating them and they are so much healthier than your average cookie. I modified a few things. I did use the special Bob's Gluten Free Oats, brown rice powder protein, and a mixture of Palm Coconut Sugar and Stevia instead of regular sugar (which lowers the Glycemic Index even more) and I added some sugar free chocolate chips. I opted for more, and not less of the cinnamon. The consistency was way too runny at first, so I kept adding the protein powder and some regular gluten free flour as well until it was just right. Low sugar and high protein! A perfect snack or breakfast or afternoon.<br/><br/>Today I'm planning on making them again, but this time I want to add in raisins and experiment with spices. To make the recipe dairy free I'll also use almond or soy milk.<br/><br/>Thanks for the wonderful recipe addicted2creating!
