Gluten Free Candida Diet Friendly Peanut Butter Balls

"I revamped my Healthy Peanut Butter Balls to be able to eat them while on a candida diet. The trick to subbing the honey is to use a mixture of glycerin and stevia. The stevia I use is the blended kind from NuNaturals, not pure stevia (4T=1C sugar). I am also going to try this with carob powder, instead of the dry milk and will update if it turns out."

  • In a large bowl, mix together all ingredients. You may have to mix by hand. I've found it helps to mix with your hands much like kneading dough.
  • Roll into 1-inch balls and store in airtight container in the fridge.

  1. There are too many discrepancies between the Candida diet and this recipe. Dry milk has lactose, which will feed yeast. And most gluten free flour blends have very high levels of starch, because they tend tp include rice flour, arrowroot powder, guar gum or other carb-laden foods. Even though they may contain some fiber, the Candida diet suggests staying far from high carb ingredients. Even oatmeal is off limits until the dieter is stable and we'll. Maybe that's where youre at, however I think you may consider renaming your recipe since it could cause a flare up in someone who doesn't know better. Please come up with another PB ball recipe- this sounded so delicious!

I grind my own grain and make all my own breads.?Working 2 hours a day in the local high school lunch room.??I am homeschooling my high schooler.? ?Also found out 1 child has multiple food allergies (wheat, dairy, tomato, chocolate, etc) and another is gluten sensitive. So, we just started (July 09) eating gluten and dairy free. I've been busy with getting our house market ready, even though it's not the best time for that.?
