DIRECTIONS

  • Preheat oven to 350°F Grease two 8x4-in loaf pans and set aside.
  • In a large bowl, combine the flour, baking soda and salt then set aside.
  • In a small bowl, whisk the eggs, bananas, sugar, applesauce, oil and vanilla. Stir into the dry along with the chocolate chips, just until moistened.
  • Divide the batter between the two pans. Bake for 45 - 55 minutes or until a toothpick inserted in the centre comes out clean. Cool for 10 minutes before removing from the pans to wire racks.
