  • Prepare carrots per your preference (I usually peel and then cut 1/2" slices on a diagonal and cook in a pressure cooker).
  • While carrots are cooking, peel and grate enough fresh ginger to make 2 teaspoons.
  • Add ginger and the remaining ingredients, except the sesame seeds, to a saucepan and bring to a boil; remove from heat.
  • Transfer cooked carrots to serving dish, pour sauce over top and sprinkle with toasted sesame seeds.
  • Can add 1 tablespoons of honey to the sauce before bringing it to a boil if you like some sweetness, but we prefer allowing the zing of the ginger to shine through.
