German Potato Salad

  • In a pot simmer the potatoes until tender. In a pan cook the bacon until crisp and drain the fat. To the bacon add the onions and cook until transparent. Then add the flour, salt, sugar and pepper and blend well. Stir in the vinegar and water and cook for ten minutes. Take the potatoes and cut them into cubes and place in a serving dish. Pour the sauce over the potatoes and serve.

  1. November 03, 2012: I think you really need to double this recipe because it is to die for! I love smelling the vinegar mixture as it cooks. Very easy to make. Thank you for posting and I'll be making this again. Made for Fall PAC 2012 ......UPDATE: My son asked me to make this again already. So on Nov 6th, I boiled 5 pounds of potatoes and tripled the vinegar dressing. The amount of potatoes to vinegar was perfect. We really like this recipe!! Thank you for posting it.
     
  2. I made half the recipe. This tasted like my SIL's late mother's recipe. She was an excellent German cook. This is the recipe I'll use from now on. Thanks for sharing Bekah! Made and enjoyed for PAC Spring '09.
