  • Put yolks of egg 5 eggs ina bowl until very light. Add the milk and flour gradually and mix into a smooth batter which is not too thick. Fold in the stiffly beaten egg whites. drop large spoonfuls on a hot greased griddle.
  • Serve hot sprinkled with sugar or spread with currant or other tart jelly or jam.

  1. I remember doing what we used to call " egg pancakes. " The recipe came out of an old German cookbook that I think my grandma had and was written sometime in the '20's. You used to measure so many spoonful's of flour to each egg and spoonful's of milk. As I recall if your measurements weren't just right you either got real thin batter and runny pancakes or too thick batter ...needless to say but you spent more time tinkering with the batter than sitting and eating pancakes . What I'm trying to say this recipe is so much simpler and the results are exactly what I remember....Thank you for posting this !!!! Unfortunately I didn't have any sugar in the house when I tried these but I did have some vanilla ice cream so I added some of that to the batter for the sweetness...wasn't bad but next time its strawberry jam and powdered sugar for sure.
