- 1⁄4 cup chopped onion
- 1⁄4 cup chopped zucchini
- 1⁄4 cup chopped carrot
- 1⁄4 cup chopped cauliflower
- 1 cup canned Italian tomatoes
- 2 cups low sodium vegetable broth
- 1⁄2 cup cooked barley
- 3 ounces boneless skinless cooked chicken breasts, cubed
- 1 tablespoon oil
- 1⁄4 teaspoon minced garlic
- 1 teaspoon Italian herb seasoning
directions
- In a saucepan saute the garlic and onion in the oil until the onion is clear. Add veggies and lightly saute. Add broth and tomatoes and simmer about 5-8 minute Stir in the barley, chicken and herbs heat through.

This was a really excellent soup that made me feel really healthy while eating it. I did change things up a little bit. First of all, I doubled the ingredients so that I would have a healthy batch. Then, after adding the tomatoes and the broth, I added 1 cup of uncooked barley, brought it to a boil, and then simmered for 30 minutes. Obviously, I added too much barley, so I ended up adding about 1-1/2 cups of water. I also seasoned with salt and pepper. The end result was delightful! Thanks for sharing this nutritious and filling soup. Made for Holiday Tag game.
