DIRECTIONS

  • Heat the olive oil in a skillet over medium high heat. Add the shallots and garlic and cook for 1 minute.
  • Add the scallops and sear until done (about 3 minutes per side).
  • Remove from pan and add the zucchini noodles. Stir and cook noodles coating with the garlic and oil mixture. Season with salt and pepper.
  • Serve the noodles with the scallops and top with the fresh basil.
