Garlic Chicken and Potatoes (Crock Pot)

- 4 -6 chicken breasts
- 4 medium red potatoes
- 8 garlic cloves
- 1⁄4 cup melted unsalted butter
- 1⁄4 cup honey
- 1⁄2 teaspoon lemon pepper seasoning
- shallot (optional)
directions
- Cut potatoes into chunks and put in crock pot Place chicken on top Mince garlic and sprinkle on top of chicken Mix honey and butter together.
- I recommend you heat the honey a little so it is easy to work with.
- Spread the honey and butter mixture over the chicken.
- Sprinkle lemon pepper on top of all of it.
- Turn crock pot on low and cook for 6-7 hours.

First, I used thighs instead of breasts since that's what I had. I used 5, since I'm feeding 5 adults. I browned them before I put them in the slow cooker. I ended up using 10 red potatoes because there is no way 4 will feed 5 adults. I used 12 cloves of garlic and the garlic flavor was still fairly weak to us. I did use the full amount of melted butter and honey, and didn't find it too sweet. I tossed in an onion because it looked like it was going to be too bland. Since I didn't have lemon pepper, I added a 1/2 tsp turmeric, probably 1 T or so of ground black pepper, and 2 c chicken broth. I cooked it on low for 8 hours, and then pulled all the liquid out and moved it over to the stove. I made a roux and used the liquid to make gravy. I ended up adding another cup of chicken broth to extend it. To the gravy I added a 1/2 tsp of turmeric, a tsp of poultry seasoning, 1 T granulated garlic, and 1 T granulated onion before serving. It was okay, but the chicken ended out too dry. I'm going to try cooking it for a little less time next time, probably 6-7 hours instead of the full 8.

Love the recipe! Mine ended up being Chicken soup. I made my own broth because I didn't have any (1 tbsp butter to 1 cup of water). I added spices to the chicken before I put in the crock pot because I saw in other reviews that chicken was bland. I also added spices to the broth. I did not have honey so I used apples and even they came out deliciously topped on the chicken. Chicken was tender. I added carrots and broccoli because I had it there and my husband loves broccoli. Such a great recipe and was my first time using the crock pot wish I would have taken a picture of it to post here and show my mama. Thank you so much! Loved the recipe!!
