Garlic and Sage Chicken and Potato Saute

- 3 tablespoons oil
- 1 tablespoon butter or 1 tablespoon margarine
- 6 fresh sage leaves
- 3 cloves minced garlic
- 6 boneless skinless chicken breast halves, cut into strips
- 1 lb small red potato, quartered
- salt and pepper
- 1⁄3 cup chicken broth
- chopped fresh parsley
directions
- In a large skillet, heat oil and butter together.
- Over low heat, add sage and garlic and cook for about two minutes.
- Increase heat to medium high and add chicken and potatoes and cook for about three minutes.
- Season with salt and pepper to taste.
- Turn heat to low again, cover and cook for another ten minutes.
- Add chicken broth and cook uncovered for three minutes more.
- Sprinkle with chopped parsley and serve.

I added an extra step because I have a tendency to undercook potatoes and I was skeptical about the potato cooking time. I steamed the potato chunks for an hour and a half first, then continued to follow the recipe. I suppose one could par boil them, instead, but I think steaming is the way to go for any potato (and my Orgreenic pan set came with a steamer. Those things are fantastic!!) I also highly recommend growing sage! You can use some fresh dry the rest. It's 1000x better than store-bought. (And it makes a lovely bath oil.) Think about it! *wink* So in conclusion, cook those taters a lil bit first, and this recipe ROCKS!
