- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- 4 cups fresh or frozen string beans, cut into 2 inch pieces
- 1⁄2 teaspoon dried thyme
- 1⁄2 teaspoon sea salt
- fresh ground black pepper
- 2 cups water
- 2 teaspoons vegetable broth
- squeeze fresh lemon juice
directions
- In large heavy saucepan, heat oil. Add garlic and beans, and saute' over high heat to sear beans, stirring frequently so they do not burn. Add thyme, sea salt, and pepper to taste. Add water and veegtable broth. Bring to a boil, cover tightly, reduce heat to med.-low, and simmer for 20-30 minutes or until beans are tender when pierced with tip of sharpe knife. Add more water, if necessary. frozen beans will take half the time. Add lemon juice, toss well.

These were really boring. The amount of water in the recipe cannot be right. 2 cups? There's no way after adding 2 cups of water and then covering tightly, that you'd ever need to add more water later. You're going to have at least that much liquid if not more at the end. It was basically boiled beans left in a garlic water. Not much flavor at all.
