Fruited Chicken Spread

"I got this recipe from a former neighbor about 12 years ago. She and her family haved moved a few miles away, into town, but I wish they were still in the neighborhood. She actually got my DH to dress as the Easter Bunny for a couple of years!!! I have pics to prove it. Anyway, back to the recipe. It is delicious and refreshing, especially in the warm weather we are beginning to have in NC. Again, guessing on the number of servings. Cook time is chill time, if you can wait for it to chill. I never do. ENJOY!!"

  • Chill for 1-2 hours.
  • Sprinkle with almonds.
  • Serve with crackers on lettuce.

  1. This recipe is awesome! I am going to make this again in a few weeks for our Christmas party! The savory flavor of chicken mixed with the sweetness of fresh dates and pineapple on top of a slightly salted cracker is the BOMB! What more could a person ask for? I poached the chicken with a bit of chicken broth and followed the recipe as directed. This is yet another recipe that is going to become standard in our home. 100%!
