Fruit De Light Dessert

Lovely light dessert. Replace apricots with any fruit you like--either fresh or canned. Match up the colour of fruit with jelly and yoghurt (keeping the same quantities as with the apricot recipe). Not sure how long it takes to chill.

ingredients
- 1 (85 g) packet orange diet jelly crystals
- 1 cup drained apricot halves in juice (no sugar added)
- 1 (200 ml) container light peach yogurt
- 200 ml boiled water
directions
- Dissolve jelly in 200mls boiled water.
- Pour into food processor/blender with apricots and puree together.
- Add in yoghurt, blend till mixed.
- Pour into dessert dishes, chill until set.

EXCELLENT recipe... If you want to sneak fruit into family members who won't usually eat it, then THIS is the recipe for you LOL. You have to realise that I have the fussiest family on the planet. DH "doesn't prefer" fruit and 6 year old DD likes her VERY limited menu, much as I try and introduce new things. Ok the apricots are canned, and not fresh but my thinking is that if they get used to a new taste then a fresh ones will be easier to introduce at a later date. My photo is very orange in colour as Orange flavour jello was the only suitable colour I had to hand, but this was easy to make and it tastes great! DH LIKED this even though he is no fan of fruit and said he wouldn't mind having it again.(WOW) Then the true moment of victory... DD approached and saw the extra one I made (sans apricot on the top) DH was reaching for it.. DD askes what it is.. he replies with a straight face "a dessert made with orange sweets, do you want one bite or all of it?" she replied "all of it" and ate the lot! THAT is quite and achievement and gets this recipe 5 stars in a nano second. Sadly the 2 year old wasn't convinced but 2 out of 3 is still victory indeed. YES, I WILL be making this again. THANKS!
