Fruit and Oatmeal Muffins

ingredients
- 1 cup rolled oats
- 1 cup buttermilk
- 1 cup flour
- 1⁄2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 egg
- 4 ounces applesauce
- 3⁄4 cup brown sugar
- 1 teaspoon vanilla
- 1 cup dried mixed fruit
- 1⁄2 cup walnuts, chopped
directions
- Pre heat ovens to 375.
- Grease and flour muffin pan.
- Soak oats in buttermilk for 5 minutes.
- Combine dry ingredients,set aside.
- Combine beaten egg,applesauce, brown sugar, vanilla and blend well.
- Add to oatmeal/buttermilk, blend well.
- Fold in dry ingredients.
- Mix till wet.
- Add in fuit and nuts.
- Fill muffin cup 3/4 full.
- Bake 15 to 20 minutes.

A nice change of pace to our muffin routine. They are a dense muffin but still have enough moistness that you don't feel you have to grab a drink right away. I used a homemade applesauce that had cinnamon and nutmeg already mixed in and then used dried cranberries (that is our family favorite!) and that combination was wonderful. I'd like to try it with dried apple chips too. Great with a cup of coffee in the morning and warmed up just a bit in the microwave. Thanks for sharing a nice muffin recipe! I have made this recipe (almost the same) for years. The only difference being that I soak the oatmeal for 1 hr. and use 2 ozs. oil plus 2 ozs. of applesauce -other than that the rest remains about the same. I change fruit according to what I have in the cupboard. Sometimes I add a tsp. of grated orange rind and omit the vanilla. There are many options here.
