Frozen Peanut Toaster Slices

"A breakfast treat! Makes a kind of loaf which you then toast from fresh or frozen. It's delicious buttered with strawberry jam."

  • Grease or line a 9x5x3 inch (1lb) loaf tin and set it aside.
  • In a bowl, sift flour, sugar, baking powder, and salt (if using).
  • Add the peanut butter and rub in with your fingers as if making pastry, until it resembles crumbs.
  • Add the milk and eggs; stir just until the mixture is well combined but do not overbeat.
  • Turn the mixture into the loaf tin.
  • Bake at 180c/350f for 40-45 minutes.
  • Check to see if cooked by inserting a knife in the centre - it should come out clean.
  • Remove from tin and put on a rack to cool.
  • When cool slice into 3/4 inch slices and either toast, or, if freezing stack the slices with a small sheet of greaseproof paper between each slice.
