Fried Sweet Potatoes or Yams

"A tasty side dish! Every year at my church's annual fish fry these potatoes are included on the menu. Everyone looks forward to this treat! Great with pork chops! Very easy to prepare. Cut potatoes into thick round "wheels"."

directions

  • Cut potatoes in round "wheels" about 1/2 inch thick and immediately immerse in water to not discolor.
  • Drain and pat dry with paper towel. Fry on low heat until golden brown and stick tender in the middle.
  • Place on paper towels and salt immediately.
  • Serve and enjoy!

Tried it for a snack today, just used 1 sweet potato,but instead of using salt, I drained them on a paper towel, and dipped them on both sides in a small bowl of cinnamon sugar. I'm making a pork loin roast in my crock pot for dinner tonight and will definitely be making these for a side to go with it.
     
  3. My mom had given me some sweet potatoes. I must admit, I have never eaten sweet potatoes. I wasn't sure if I should have peeled them but I didn't but wish I would have as I thought the skins were a bit tough. This was real good and easy to make. I followed the recipe as written.
     
  4. Am a big yam fan & these were so easy to make! Simple, yet tasty, too! Another time I want to fry them a little less, until they're not quite done, then use them as finger food! A very nice recipe, one worth keeping! [Made & reviewed as a bonus tag in AUS/NZ Recipe Swap, Mar 08]
