  • Cut cream cheese into small (1/2 ounce) cubes.
  • Heat oil on medium heat. Add shallots, then spinach.
  • Wilt spinach for 4-5 mins, stirring or tunrning frequently to allow all leaves to cook down.
  • Pour off any excess liquid, then reduce heat to medium-low.
  • Add garlic powder and nutmeg, then add cubed cream cheese and allow to melt, stirring occasionally to distribute.
  • Remove from heat and top with grated parmesan cheese.
