- 16 ounces Baby Spinach
- 2 teaspoons olive oil
- 3 ounces cream cheese
- 1 teaspoon minced shallot
- 1⁄4 teaspoon garlic powder
- 1⁄4 teaspoon nutmeg
- 1⁄2 teaspoon parmesan cheese
directions
- Cut cream cheese into small (1/2 ounce) cubes.
- Heat oil on medium heat. Add shallots, then spinach.
- Wilt spinach for 4-5 mins, stirring or tunrning frequently to allow all leaves to cook down.
- Pour off any excess liquid, then reduce heat to medium-low.
- Add garlic powder and nutmeg, then add cubed cream cheese and allow to melt, stirring occasionally to distribute.
- Remove from heat and top with grated parmesan cheese.
