Mix berries in a large bowl. Add the vanilla sugar, mix and refrigerate.
In a mixing bowl, cream together the cream cheese and powdered sugar on low until smooth. Add the lemon juice, lemon peel and mint. Mix on medium for 30-60 seconds.
Scoop into a pastry bag or ziploc bag. Refrigerate for at least 1 hour.
Line up 8 parfait or stemmed glasses. Spoon 2 tablespoons of berries into each glass followed by 2 tablespoons of the lemon cream. Repeat until glasses are filled.
