French Onion Soup (Vegan)

- 2 tablespoons olive oil
- 3 onions, sliced
- 1 portabella mushroom cap, sliced
- 3 garlic cloves
- 1 teaspoon thyme
- 1⁄4 cup tomato paste
- 1 cup dry red wine
- 4 cups vegetable broth
- 1⁄4 cup soy sauce (I will probably try Bragg's instead)
- 1⁄8 cup dark miso (dissolved in 1 c water or stock)
- 1 tablespoon nutritional yeast flakes
directions
- Heat oil over medium heat and saute onions 3 minutes before stirring. Cook 20 minutes, or until the onions are well browned.
- Add mushroom, garlic, thyme, and tomato paste. Cook 5 minutes, or until the tomato paste turns golden brown.
- Add the wine and scrape the pan bottom, releasing any brown bits. Reduce wine as you simmer 2 minutes.
- Add the stock, soy sauce, miso, and yeast.
- Simmer uncovered for 10 more minutes.

I don't care if there are 800 other French Onion Soup recipes, this is the only one there should be! I made this exactly as directed (using the Bragg's in place of soy sauce) and it was great. The onions were nice and carmelized after 20 minutes and everything came together so easily. Loved the flavor and can't think of a thing to change. I served it with some crusty bread and will make this gem again. Thanks!

I live in Knoxville, TN with DH, my beautiful son, and the most spoiled cat on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!!
To explain the name: I was veg for 11 years, vegan for 1. In the last year or so I started eating poultry and fish again, but my brother-in-law's nickname for me (smelly vegetarian) has always stuck.
