French Herbed Onion Tart

- 1 loaf frozen bread dough
- 3 tablespoons olive oil
- 3 large onions, thinly sliced
- 1 tablespoon fresh basil or 1 tablespoon thyme leaves, chopped
- 1⁄8 teaspoon white pepper
- 2 (2 ounce) cans each anchovy fillets, drained
- 10 oil-cured olives, cut in half and pitted
directions
- Thaw the bread as directed on package.
- Heat oil in 10 inch skillet over med-high heat.
- Stir in onions; reduce heat.
- Cover and cook about 25 minutes, stirring occasionally, until onions are very tender.
- Stir in basil and white pepper. Remove from heat.
- Lightly greast cookie sheet.
- Shape dough into flattened rectangle on lightly floured surface.
- Roll dough with floured rolling pin into rectangle, 14x11 inches.
- Place on cookie sheet; let rest 15 minutes.
- Spoon onion mixture evenly over dough to within 1" of edge.
- Arrange anchovies in lattice pattern on onions.
- Top with olives. Let tart rest 15 minutes.
- Heat oven to 425°.
- Bake 15 - 20 minutes or until crust is brown.
- Serve warm.

Yikes!! My daughter had fun in PaintShop Pro!! What she can do with a picture.
My husband and I live in the "bush" and hour from the closest town. Life here is quiet, yet so much more busy than when we lived in the "city". We grow our own veggies, several kinds of berries, and grow lots of hard neck organic garlic. We have 60 chickens, 4 dogs, 1 cat, 1 bird. Quite the menagerie.
I make all my own breads, and sell them (along with the eggs). I have a group of friends whom I make extra goodies for.
