Sauce
- 2 tablespoons extra virgin olive oil
- 1 onion, chopped (medium)
- 4 garlic cloves, chopped
- 3 tablespoons brown sugar
- 2 tablespoons cider vinegar
- 1⁄2 cup tomato sauce
- 1 teaspoon prepared mustard
- 1 tablespoon chili powder
- 1⁄2 teaspoon liquid smoke

- 15 ounces baked beans
- 15 ounces kidney beans, drained
- 15 ounces black-eyed peas or 15 ounces garbanzo beans, drained
- 15 ounces lima beans, drained
directions
- Sauce: In a small skillet over medium heat, heat oil and saute onion and garlic until tender. Add remaining ingredients and stir well.
- Beans: In a 2-quart casserole, combine beans and sauce and bake at 350 for 45 to 60 minutes.

Made this for a potluck on Sun. where I knew there would be 2 vegetarians. They loved it and, because I knew they like very hot food, I even added some hot pepper flakes. Very good cold too with a dollop of yoghurt on top. Next time I make it I will use my own tomato sauce - prefer the texture and taste.
