  • Stir together butter and honey.
  • Add eggs, beat well.
  • Blend together dry ingredients.
  • Add wet to dry, stir until moistened.
  • Fold in raisins.
  • Scoop onto parchment lined sheet pans.
  • Bake 8-10 minutes @ 325*F convection (350*F conventional).

  1. These cookies are glorious. Magnificent. I did make some tweaks (see tweaks) based on ingredients-on-hand.
     
  2. I have tried several sugarless cookies. These are really good! They bake best in a convection oven. I added a little nutmeg and a dash of clove as well.

Tweaks

  1. I made these cookies completely gluten-free by substituting the 1 cup quick oatmeal with 1/2 cup coconut flour and 1/2 cup Bob's Red Mill creamy buckwheat cereal (basically coarsely ground buckwheat). I also subbed 2 tbs whole roasted flax seeds for the 2 tbs flax meal. These babies are delightful.
