  • Crush cereal with a rolling pin. Mix with milk and let stand 5 minutes.
  • Combine flour, flax meal, brown sugar, carrot, sugar, coconut, baking powder, cinnamon and salt. Stir in apple.
  • Beat eggs. Stir in vanilla.
  • Stir oil into cereal mixture. Stir egg mixture into cereal mixture.
  • Stir in dry mixture, just until combined.
  • Spoon into a gresed or paper cup lined 12-cup muffin pan.
  • Bake in a preheated 375F oven for 22 minutes or until done. Immediately remove from pan.

  2. These were absolutely wonderful. I used zucchini instead of carrots because that's what I had and I also added chocolate chips instead of raisins. Absolutely wonderful. Thanks for the very healthy recipe
     
  3. I made these for a healthy snack so I ommitted the coconut which is high in saturated fat, used skim milk, egg whites (same volume) and applesauce instead of oil. They were delicious. Next time I will do the same but replace 1/2 the sugar with Splendor.
     
  4. This was my first recipe using flax seeds and I was pleasantly surprised! These had a fluffy texture (not gummy at all) and the sweetness was perfect. The additions of apples, carrots, and coconut really add to the texture. To me, these tasted like a good bran muffins and didn't taste "too healthy" like I feared! Thanks MaeEast.   5. Yummy!! My tummy is very happy! and what a great way to make bran and flax meal taste great. My son thought they were a 4 star but dh and I think 5 star. I did mess with the recipe a tiny bit by adding a bit of chopped walnuts. I used the bran cereal that I had on hand(Bran Buds, I think), and lowfat milk since it was what I had in the house. I will definitely be making these again. Thank you.
