Fisherman's Wharf-Style Clam Chowder in Bread Bowl

- 2 tablespoons diced salt pork or 1 slice bacon
- 1 finely chopped onion
- 1 finely chopped celery
- 1 medium potato, peeled and diced
- 2 tablespoons all-purpose flour
- 2 cups clam juice
- 1⁄4 teaspoon dried thyme
- 1 cup chopped canned clams
- 1 cup heavy cream
- 2 drops Tabasco sauce
- salt and pepper
- 1 1⁄2 lbs bread, bowl
directions
- Place salt pork or bacon in a pot and cook 2 minutes over medium heat until crisp.
- Transfer to a plate and set aside.
- Add the onion and celery and saute over medium-low heat for 5 minutes or until onions are translucent and celery softens.
- Sprinkle flour over the mixture and stir into a paste.
- Add clam juice, potato and thyme.
- Increase heat and bring ingredients to a boil.
- Reduce to low and simmer for 15 minutes, or until potatoes are tender.
- Add clams and stir in cream.
- Continue to simmer for 5 minutes until thick and creamy.
- Add salt, pepper and Tabasco sauce.
- Spoon the chowder into the bread bowl and garnish with salt pork or bacon.
- Serve hot.

Very similar to my own recipe but I use half chicken broth and half clam juice for extra flavor. I also add a shredded carrot plus one cup Half & Half and one cup heavy cream for a rich, delicious chowder. We aren't fans of the bread bowl idea. The result is soggy bread and chowder that quickly becomes too thick and gloopy by absorbing starchiness from the bread.

<p>I am originally from Johnstown, PA infamous for three floods. Met my husband online, married, and moved to Latrobe, PA. Latrobe is about a 45 minute drive from Johnstown. Arnold Palmer, Mr Rogers (Mr Rogers Neighborhood), and the now defunct Rolling Rock beer brewery, all originate from Latrobe. I have been told that the banana spilt originated here in Latrobe, PA, but that is debateable with a town in Ohio! I have one dog, and a blue heeler, no kids. Unfortunately, my beautiful German Shepard, Adrianne, had to be put to sleep on February 21, 2008. We have adopted Sheila, a Blue Heeler. I am a self taught cook, as I have learned to cook by trial and error. I have A TON of cookbooks, but all of the recipes I try are from this website.</p>
