Fiery Island Pork Chops

  • Coat chops with jerk seasoning, set aside.
  • Microwave jelly, pineapple juice and ginger on high for 30-60 seconds or until melted.
  • Grill pork over medium high heat for 5-6 minutes per side, turning once.
  • Baste frequently with the glaze while grilling.
  • Put pineapple rings on the grill during last 3 minutes of chop grilling time, baste with glaze, grill until heated through.
  • Serve chops with pineapple.

  1. I got this recipe from Reader's Digest's ad page (for the Pork Council) and have made it 4 times so far. I tend to like things spicy so I double the jelly and the pineapple juice. It's a really easy recipe and very tasty!

I have taught myself how to cook since college and my advice about cooking is to keep practicing, try all sorts of cookbooks and different recipes, and don't be afraid to fail--you'll always learn something from it (of course, I'm a teacher so it makes sense that I believe that). I moved to Dallas 3 years ago and I love the ready availability of genuine Mexican food in the area. It's the one kind of cuisine I've never tried to make myself because the restaurants in my area are so good. I love movies, music from the 70's and 80's, animals, and beautiful weather.
