Feta Cheese and Garlic Dip

1 cup
ingredients
- 1⁄2 lb feta
- 2 cloves garlic, mashed
- 2 tablespoons olive oil
- 1⁄3 teaspoon oregano
- 1⁄2 teaspoon Tabasco sauce (optional)
directions
- Place feta in a bowl and mash well.
- Add the rest of the ingredients and mix together thoroughly or alternatively place all ingredients in a food processor and whirr on slow speed until smooth.
- Serve with crackers or slices of fresh country bread.

I made this last night to take to a friend's house as an appetizer and we all loved it. The garlic was really pronounced as I used a couple of huge cloves. I like things garlicky, so this worked for me, but next time I will try not to use ones quite so big. I made exactly as posted, including the Tabasco. We served over toasted garlic bread slices (DH said we kept the vampires away last night!). The dip was wonderful and I will defintely make this again. The four of us devoured the whole thing, so I would definitely double the recipe if you are hoping to serve more than 4. Thanks, Evelyn!

I used sriracha instead of tobasco, and also added about 1/2 cup deli artichoke salad with olives, onion, peppers, etc... Processed it all together with about 1/2 cup sour cream added to the recipe to extend the recipe a bit, since good feta is fairly expensive, and the flavor of the dip came out great! Served with pita chips.

OK, here goes. I live in Athens, Greece. I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages!
I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure.
So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call.
What did I do wrong?
Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths.
I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time.
