Fenwick Island Fish Patties

"From "Lean Beach Cuisine - A Collection of Healthy Coastal Recipes" by Jewel Cammarano. Creating fried flavors with oven-baked foods is easy with vegetable cooking spray. Simply coat the food with selected coating and spray the surface with cooking spray then bake as directed. This hastens the cooking time, causing the coating to shrink around the food, seal in moisture and crisp the outside."

  1. Really nice and fresh tasting. I used cod, and was out of Cajun seasoning so I used Greek and also some cayenne and that worked for us. I'm not a big fish fan, but these were really nice and not the least bit fishy. These cakes would be really great for a light summer dinner. Thanks for sharing the recipe.
