Fennel, Celery and Red Onion Salad With Salami and Cheese

  • If you have a mandoline, shave the fennel. Otherwise, slice very thinly. Slice celery thinly on the bias.
  • Combine fennel, celery, onion, salami and cheese in a large bowl.
  • Drizzle with olive oil and lemon juice, and season with salt and pepper. Toss thoroughly. Add fennel fronds and toss gently.
  • Let stand 10 minutes before serving.

  1. Loved this! We made a whole meal of this, with a little round of brie/goat cheese and some crackers. While it was fantastic as written, next time I might try adding some thinly sliced apples, too. Thanks for sharing!
     
  2. One of my favourite meal time salads. I have used this like an antipasto before dinner for company. Usually I make fennel and radish with lemon, but this is a full meal, with a piece of garlic bread. Great recipe....Its nice to have in print .

My screen name is a diminutive in Lithuanian for bread, so you won't be suprised to learn that I love to bake bread. In recent years I have been baking a lot of sourdough breads and have several starters sitting in my refrigerator. But I like to cook a lot of other things, as well, especially from various cultures. The cat wishes I would concentrate on meat and fish... I joined a few years ago but started posting recipes and participating in forums just recently - I wish I had done so earlier.
