ingredients
- 4 cups cucumbers, peeled and seeded
- 4 cups onions
- 1 medium cauliflower
- 2 red peppers
- 1 head celery
- 2 green peppers
- 8 large apples, grated
- 3⁄4 cup salt
- 5 cups boiling water
- 6 cups vinegar
- 6 cups granulated sugar
- 2 tablespoons mustard seeds
- 2 tablespoons celery seeds
- 3 tablespoons turmeric
- 3 tablespoons cornstarch
directions
- Coarsely chop all vegetables.
- Cover with salt and boiling water; let stand 3 hours.
- Drain and rinse.
- To make pickling liquid, combine remaining ingredients in large stockpot, bring to a boil, add vegetables, return to boiling point, reduce heat and simmer for 20 minutes.
- Pour in hot sterilized jars and seal at once.
- Makes app. 12 (1 pint) jars.
- Chop vegetables in the food processor using Pulse mode.
